Ingredients

  • 1 lb. dried pinto beans
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 bay leaves
  • 2 chicken bouillon cubes
  • 1 (16 oz.) can tomatoes
  • 4 oz. ham chunks
  • 1 green bell pepper, chopped
  • 2 tsp. chili powder
  • 1/2 tsp. dry mustard
  • 1/4 tsp. oregano
  • 1 1/2 tsp. brown sugar

Directions

    Soak beans in water to cover in soup pot overnight.

    Drain; rinse.

    Add water to cover, onion, garlic, bay leaves and chicken bouillon.

    Simmer over low heat for 1 1/2 hours, stirring occasionally.

    Add tomatoes, green pepper, seasonings, ham chunks and brown sugar.

    Remove bay leaves before serving.
