Ingredients
- 1 lb. dried pinto beans
- 1 onion, chopped
- 2 cloves garlic, chopped
- 2 bay leaves
- 2 chicken bouillon cubes
- 1 (16 oz.) can tomatoes
- 4 oz. ham chunks
- 1 green bell pepper, chopped
- 2 tsp. chili powder
- 1/2 tsp. dry mustard
- 1/4 tsp. oregano
- 1 1/2 tsp. brown sugar
Directions

1Soak beans in water to cover in soup pot overnight.

2Drain; rinse.

3Add water to cover, onion, garlic, bay leaves and chicken bouillon.

4Simmer over low heat for 1 1/2 hours, stirring occasionally.

5Add tomatoes, green pepper, seasonings, ham chunks and brown sugar.

6Remove bay leaves before serving.
