- 1 lb. bacon, diced
- 1 medium onion, chopped
- 32 oz. frozen hash browns, thawed
- 10 eggs
- salt and pepper to taste
- 2 c. (8 oz.) shredded Cheddar cheese
- chopped parsley
Directions

1In a large skillet, cook bacon and onion until bacon is crisp. Drain all but 4 tablespoons drippings and add hash browns to skillet; mix well. Cook about 10 minutes, or until browned.

2Make 10 wells evenly spaced on top of potatoes.

3Place 1 egg in each well, salt and pepper and sprinkle with cheese, if desired.

4Cover and cook over low heat until eggs are set.

5Serve immediately.
