- 1/2 lb. bacon
- 2 lb. potatoes diced
- 1 med. onion diced
- 1 tsp. salt
- 1/2 tsp. pepper
- 12 large eggs
- 1-1/2 c. (6 oz) shredded cheddar cheese
- Salsa or Ketchup
Directions

1Cook bacon in a large skillet until crisp, remove bacon and drain on paper towel reserving 2 Tbsp. drippings in skillet. Crumble bacon and set aside.

2Saute potatoes, onion, 1/2 tsp. salt, and 1/4 tsp. pepper in hot drippings, stirring occasionally for 20 minutes or until browned.

3Whisk together eggs, remaining 1/2 tsp. salt and 1/4 tsp. pepper.

4Pour over potatoes in skillet. Cook over medium heat 4 minutes or until eggs are set, stirring if necessary.

5Sprinkle with bacon and if desired cheese.

6Serve with salsa or ketchup.
