Campfire Casserole

  • 1/2 lb. bacon
  • 2 lb. potatoes diced
  • 1 med. onion diced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 12 large eggs
  • 1-1/2 c. (6 oz) shredded cheddar cheese
  • Salsa or Ketchup

Directions

    Cook bacon in a large skillet until crisp, remove bacon and drain on paper towel reserving 2 Tbsp. drippings in skillet. Crumble bacon and set aside.

    Saute potatoes, onion, 1/2 tsp. salt, and 1/4 tsp. pepper in hot drippings, stirring occasionally for 20 minutes or until browned.

    Whisk together eggs, remaining 1/2 tsp. salt and 1/4 tsp. pepper.

    Pour over potatoes in skillet. Cook over medium heat 4 minutes or until eggs are set, stirring if necessary.

    Sprinkle with bacon and if desired cheese.

    Serve with salsa or ketchup.
