Candied Fruitcake

  • 3 (8 oz.) pkg. pitted dates
  • 1 lb. candied cherries
  • 1 lb. candied pineapple (yellow)
  • 8 c. pecans
  • 2 c. sifted flour (all-purpose)
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 4 eggs
  • 1 c. sugar

Directions

    Cut dates, pineapple, cherries and pecans in large pieces. Sift together flour, baking powder and salt.

    Beat eggs and gradually beat in sugar and flour mixture.

    Combine with fruit. Cover with brown paper.

    Bake at 275° for 1 hour and 30 minutes. When done and cooled off, brush with white Karo syrup.

    Makes 2 cakes.
