Candied Grapefruit Peel

- 3 pink grapefruits
- 5 c. sugar
- 2 c. water
Directions

1Cut grapefruit into large wedges and remove peel.

2Cut the peel into long strips about 1/4-inch wide.

3Put in a heavy saucepan and cover with boiling water.

4Cook at rolling boil for 10 minutes.

5Drain.

6Repeat this boiling process 3 times.

7Drain and set aside.

8In the same saucepan, combine 3 cups sugar and 2 cups water.

9Place over high heat and stir until sugar dissolves and mixture comes to a boil.

10Add the drained peels.

11Stir and reduce heat to a gentle boil.

12Cover partially, stirring occasionally, for an hour or until most liquid has been absorbed and peel is transparent.

13Remove from heat.

14Cover a large work area with wax paper.

15Pour a cup of remaining sugar on wax paper. Roll the candied peel in sugar.

16Shake off excess sugar and set on side to dry for 2 hours.

17Store in airtight containers or jars.
