Ingredients
- 4 c. pecans
- 1/2 c. sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. ginger
- 1/4 tsp. freshly grated nutmeg
- 1/4 tsp. allspice
- oil
- salt (optional)
Directions

1Cover pecans with water in saucepan; bring to a boil.

2Boil 1 minute and drain well.

3Mix sugar and spices; set aside.

4While pecans are still warm, toss with sugar mixture.

5Spread on tray in single layer; let dry, 8 to 24 hours.

6Heat oil to 350°.

7Fry nuts about 2 minutes, until sugar caramelizes and nuts are dark brown. Drain well.

8Sprinkle with salt while still warm if desired. Store in airtight container.

9Makes 4 cups.
