- 2 medium size yams, baked
- 1 c. crushed pineapple
- 1/2 c. pineapple juice
- 1 1/2 c. sugar
- 1/4 c. butter
- 1/2 tsp. vanilla extract
- 1/2 tsp. grated orange peel
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
Directions

1Remove skin from baked potatoes.

2Slice as desired.

3Pour crushed pineapple with juice over potatoes.

4Sprinkle sugar over. Place sliced butter over or on top.

5Add vanilla.

6Add grated orange peel, cinnamon and nutmeg.

7Place in 350° oven 1 or 1 1/2 hours, until candied and brown.

8Yields 4 servings.
