- 1 cup butter, softened
- 1 cup powdered sugar
- 1 1/2 teaspoons vanilla extract
- 1 1/3 cups all-purpose flour, unsifted
- 1 cup rolled oats
- 1/2 teaspoon salt
- 3/4 cup peppermint candy, crushed and divided
- 1/2 cup powdered sugar, for rolling

1Oven 325.

2Beat together butter and powdered sugar until creamy.

3Mix in vanilla extract.

4Add flour, oats and salt.

5Combine well.

6Stir in 1/4 cup crushed candy canes.

7Roll rounded teaspoonfuls of the dough in the 1/2 cup powdered sugar.

8Place balls about 2 inches apart on a greased cookie sheet.

9Flatten with a fork in a criss-cross pattern and sprinkle cookies with about 1/4 tsp of remaining crushed candy canes.

10Bake at 325 for 18-20 minutes or until the edges of the cookies are SLIGHTLY brown.

11Let cookies cool on the pan for about 2 minutes, and then transfer to a rack to cool.
