- 7 c. ripe cantaloupe pulp
- 2 c. sugar
- 2 Tbsp. lemon juice
- 1 tsp. grated lemon rind
Directions

1Place cantaloupe in a large saucepan.

2Bring to a boil over low heat.

3Boil, stirring occasionally, until smooth.

4Stir in sugar, lemon juice and rind.

5Continue boiling for 15 to 20 minutes.

6Spoon, while hot, into hot sterilized jars.

7Seal with paraffin.
