- 1 1/2 cups whole wheat flour
- 1 1/2 cups unbleached flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter
- 3/4 cup dark brown sugar
- 1 egg
- 3/4 cup milk
Directions

1Sift the flours, baking powder and salt.

2Set them aside.

3Cream the butter.

4Beat in the brown sugar and then the egg.

5Mix the dry ingredients in alternately with the milk to make a soft biscuit-like dough.

6Pat it out to about 1 inch thick on a floured board, and form it into a neat circle.

7Cut it into 8 or 12 wedges, and bake them at 350°F on a lightly greased cookie sheet, until golden brown, about 12 to 15 minutes.

8Less traditional but speedier is to scoop them out with an ice-cream scoop from the mixing bowl onto the cookie sheet.

9Flatten them slightly, and bake as above.

10Using this method, you will probably get 8 scones.
