- 1 bulb Garlic
- 1 whole Red Onion, Chopped
- 2 Tablespoons Olive Oil
- 6 ounces, weight Spinach
- 13 cups Light Sour Cream
- 13 cups Mayonnaise
- 1 teaspoon Ground Thyme
- Salt And Pepper, to taste
Directions

1Heat oven to 350 degrees F. Cut off the end of the garlic bulb and wrap the bulb in foil.

2Roast in the oven for 30 minutes.

3While its roasting, saute the onion in oil slowly to get it really soft and then add in the spinach when it is almost done, to wilt it.

4Squeeze out the garlic cloves into a bowl and add the onion and spinach and the rest of the ingredients.

5Mix it together and then serve with chips, crackers or veggies.
