Cape Cod Fish Chowder

Ingredients
- 1 large chopped onion
- 1/2 stick butter
- 3 large potatoes, pared and sliced
- 2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. basil
- 2 c. water
- 1 lb. frozen cod or haddock fillet, partly thawed
Directions

1Saute onion until tender in butter.

2Add potatoes, salt, pepper, basil and water.

3Cover.

4Simmer 15 minutes.

5Place fish cut in chunks over mixture and simmer 15 minutes or unit fish flakes.

6Add 1 can (12 ounce) whole kernel corn and 12 ounce can evaporated milk or little cream.

7Heat just to boil.

8Serve in soup bowls with chowder crackers.

9Add parsley for color.
