Capellini With Fresh Tomato

Ingredients

  • 16 oz. capellini or angel hair pasta
  • 4 c. fresh tomatoes, peeled and chopped
  • 1 c. fresh parsley, chopped
  • 1/2 c. red onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 c. olive oil
  • 1/2 c. red wine vinegar
  • salt and freshly ground pepper
  • freshly grated Parmesan

Directions

    Mix all ingredients except pasta and Parmesan in a large bowl. Cook pasta, al dente, according to package directions.

    Drain pasta and add to sauce in large bowl.

    Toss well.

    Cool to room temperature before serving.

    Serve grated Parmesan on the side.
