  • 1 1/2 c. dry peas (navy) beans
  • 7 c. boiling water
  • 1 small ham hock or ham chunks
  • 1 c. chopped onion
  • 1 c. finely chopped celery stalks and leaves
  • 2 Tbsp. chopped parsley
  • 1/2 garlic clove, finely chopped
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 bay leaf

    Add beans to boiling water.

    Return to boil and boil 2 minutes.

    Remove from heat.

    Cover and soak overnight in refrigerator.
