Ingredients

  • 1/2 cup self-rising flour
  • 1/4 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 cups milk
  • 1 tbsp butter
  • 1.5 oz dark chocolate, chopped
  • 1/2 cup cocoa powder + extra, to dust
  • 1 None egg, lightly beaten
  • 1/2 cup strong black coffee

    Preheat oven to 350°F. Lightly grease 4 coffee cups.

    Combine flour, granulated sugar and 1/4 cup brown sugar. Set aside. In a small saucepan, combine milk, butter, chocolate and 1/4 cup cocoa powder. Stir over low heat for 2-3 mins, until smooth then add to dry ingredients along with egg. Distribute between coffee cups and smooth tops.

    In a small saucepan, combine coffee, 1/4 cup water and remaining butter, brown sugar and cocoa. Stir over low heat for 2-3 mins, until smooth. Pour hot mixture evenly over puddings. Bake for 20-25 mins until firm. Let cool for 5 mins then top with whipped cream and dust with cocoa powder.
