- 1 tablespoon olive oil
- 1 pound chicken breast
- 1 pinch salt and pepper to sides
- 1/4 cup balsamic vinegar
- 2 garlic cloves, minced
- 1 pint grape tomatoes, cut in half
- 2 Basil, shredded
- 4 scoop mozzarella cheese, slices
Directions

1In a large skillet over medium-high heat, heat oil.

2Season chicken with salt and pepper and cook until golden and cooked through, 6 minutes per side. Transfer to a plate.

3Add balsamic vinegar to skillet to deglaze, then add garlic and stir until fragrant, 1 minute. Add tomatoes and season with salt. Let simmer until soft, 5 to 7 minutes.

4Stir in basil.

5Return chicken to skillet and nestle in tomatoes. Top with a slice of mozzarella and cover with lid to melt cheese.

6poon tomatoes over chicken and serve.
