Caramel Corn

  • 6 to 8 qt. popped popcorn
  • 2 sticks butter
  • 1 tsp. salt
  • 2 c. brown sugar
  • 1/2 c. white (Karo) corn syrup
  • pecans or peanuts as desired

Directions

    Cook butter, salt, brown sugar and 1/2 cup white corn syrup until butter is melted.

    Boil 5 minutes, stirring occasionally. Remove from heat; add 1/4 teaspoon vanilla.

    Beat well.

    Add 1/2 teaspoon soda.

    Beat well.

    Pour over corn in large bowl; mix well.

    Add pecans or peanuts.

    Spread this on 2 cookie sheets. Bake at 250° for 45 minutes.

    Stir every 15 minutes to coat popcorn.

    May be frozen if any leftover.
