1In a heavy saucepan, cook 2/3 cup sugar over med-high heat, until sugar begins to melt. Shake occasionally, but DO NOT STIR. Reduce heat to low and cook until sugar is golden brown- stirring frequently. Divide melted sugar (caramel) into 6 individual 1 cup or one 3 1/2 cup custard cups. Tilt cups to distribute caramel evenly along the bottom. Let cool. While cooling, combine eggs, 1/3 cup sugar, and vanilla. Beat until well combined, but not foamy. Pour over caramel in dish. Place in oven, situated in a larger 2 inch high baking pan filled 1 inch with water. Bake at 325F for 35-45 minutes for custard cups (55-65 minutes for larger souffle dish). Flan is done when knive inserted in middle comes out clean. Once done, let stand for 30 minutes or till cool. To serve, slide knife around flan to disengage from sides. You may need to place dish in a bowl of warm water to loosen. Once loosened, invert onto dish and serve.
