Caramel Pecan Pie

  • 1 (9-inch) pie shell, cooked
  • 1/2 c. white sugar
  • 2 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 3 eggs, separated
  • 1 c. pecans
  • 2 c. milk
  • 1 tsp. vanilla
  • 3/4 c. sugar
  • 1 Tbsp. margarine

Directions

    Pour 1/2 cup sugar in heavy pan on burner; let brown nicely. Add beaten eggs, milk, rest of the sugar, cornstarch and salt and let it thicken.

    Add margarine, vanilla and pecans.

    Pour into shell.

    Beat egg whites; pour over and let brown.

    Could use Cool Whip or serve with ice cream.
