Caramelized Pumpkin Pie

  • 2 1/2 c. pumpkin
  • 1/4 c. milk
  • 2 eggs
  • 1 c. sugar
  • 1 Tbsp. flour
  • 1/4 tsp. salt
  • 1/4 tsp. lemon extract
  • 1/2 tsp. vanilla
  • 1/2 Tbsp. butter, melted
  • 1 unbaked pastry shell
  • 1 c. pecans
  • 1/4 c. melted butter
  • 1 c. brown sugar, firmly packed

Directions

    Mix the pumpkin, milk, eggs, sugar, flour, salt, extracts and butter and pour into the pastry shell.

    Bake in a 425° oven for about 10 minutes.

    Reduce the heat to 350° and bake 40 minutes until done.

    Mix the pecans, melted butter and brown sugar. Sprinkle over the top of the pie.

    Place pie under the broiler until the topping is caramelized.
