Caribbean Mango Marinade

Ingredients

  • 1 1/2 cup or 2 mangos, ripe, peeled and chopped
  • 1 whole habenero chili( or jalapena for a more mild marinade)
  • 1 tbsp dark rum
  • 2 clove garlic, minced
  • 1 tbsp ginger, minced
  • 1/2 cup coconut milk
  • 1/4 cup lime juice
  • 2 tbsp fresh cilantro, finely chopped
  • 1/2 tsp salt

Directions

    place mango, chilli and rum in food processor and puree
  2. 2
    combine with garlic and ginger in medium saucepan and bring to a boil

    reduce heat and simmer 15 to 20 min.

    remove from heat and let cool

    whem cool, stir in coconut milk, lime juice, and cilantro.
