Ingredients
- 2 Tbsp. instant minced onion
- 2 Tbsp. butter
- 1 c. chopped green bell pepper
- 1 (14.5 oz.) can whole tomatoes
- 1 bay leaf
- 1/2 tsp. sugar
- 1/4 tsp. ground allspice
- 1/4 tsp. salt
- 1/8 tsp. ground red pepper
- 1 lb. medium shrimp, shelled and deveined
- 1 Tbsp. fresh lime or lemon juice
Directions

1Combine the onion with two tablespoons of water; set aside to soften, about 10 minutes.

2In a large skillet, heat the butter until hot.

3Add the green pepper and onion; cook, stirring, until almost crisp and tender (about 3 minutes).

4Add tomatoes, bay leaf, sugar, allspice, salt and ground red pepper, breaking up the tomatoes with a spoon.

5Bring to a boil; reduce heat and simmer, uncovered, until slightly thickened, about 20 minutes.

6Add shrimp; cook and stir until pink, 3 to 5 minutes.

7Stir in the lime juice. Remove the bay leaf before serving.

8Serve on steamed rice, if desired.
