Ingredients
- 3 pounds white onions or yellow, peeled and trimmed
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 cup dry white wine sherry, or water
- salt
- black pepper
Directions

1Cut onions into a small dice or lyonnaise.

2Heat a large skillet over medium-high, add olive oil and butter.

3When butter is melted, and foam subsides, add onions.

4Sprinkle onions with salt.

5Cook, stirring, 15 minutes. Reduce heat to low.

6Continue cooking about 40 minutes, until onions are soft and golden.

7When the onions begin to dry, add wine or water. Do not burn!

8Deglaze and scrape the pan to dizzolve the browned bits.

9Remove from the heat.

10Season to taste with salt and black pepper
