Ingredients

  • 9 pounds boneless blade pork roast
  • 1/2 cup lime juice fresh squeezed
  • 3/4 cup orange juice fresh squeezed
  • 12 cloves garlic crushed
  • 3 quarts water
  • 1 stick cinnamon
  • 4 tablespoons salt
  • 2 tablespoons black pepper whole
  • 5 bay leaf each
  • 1 cup brown sugar
  • 1 cup honey

    1. Trim fat from pork

    Render fat and reserve

    2. Marinate pork in lime and orange juices, garlic cloves, cinnamon, salt, black pepper and bay leaves for 8-10 hours

    3. Remove and place marinated pork in stock pot with rendered fat and water

    4. Bring to a boil, then reduce to simmer for 1 1/2 hours until meat is tender

    6. Pull pork into large shredded pieces and place on hotel pan

    7. Sprinkle pork with brown sugar and honey

    8. Cook in 375 degrees F. oven until glazed and brown.

    Serve carnitas with Frijoles Charros; fresh tortillas, guacamole and prepared salsa. Sprinkle with fresh cilantro
