  • 2 c. flour
  • 2 c. sugar
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 1/2 c. salad oil
  • 4 beaten eggs
  • 3 c. grated carrots
  • 1 c. chopped walnuts
  • 1/2 c. drained crushed pineapple (optional)

Directions

    Mix flour, sugar, cinnamon, salt, baking powder, salad oil and eggs well.

    Add carrots, walnuts and pineapple.

    Bake in a 9 x 13-inch greased dish at 350° for 1 hour.
