Ingredients
- 1 c. whole wheat pastry flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 c. raisins
- 3 Tbsp. apple juice concentrate
- 1 egg
- 1/4 c. vegetable oil
- 1 tsp. vanilla
- 1 ripe banana, sliced
- 1 c. finely grated carrots
Directions

1Stir together dry ingredients in large bowl.

2Heat raisins and apple juice concentrate in small saucepan.

3Boil 3 minutes or until raisins become soft.

4Pour juice and raisins in blender and process until smooth.

5Add egg, vegetable oil, vanilla and banana. Blend until smooth.

6Add blender mixture to dry ingredients and stir well.

7Stir in carrots.

8Pour into greased loaf pan and bake at 350° for 45 minutes.

9Makes 12 servings.
