- 4 eggs
- 2 c. sugar
- 1 1/4 c. vegetable oil
- 3 c. unbleached all-purpose flour
- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 2 c. finely shredded raw carrots
Directions

1Preheat oven to 350°.

2Grease 2 (9 x 5-inch) loaf pans.

3Beat eggs and gradually add sugar, beating until thick.

4Add oil while beating.

5Stir in flour, baking powder, soda and cinnamon, stirring until smooth.

6Stir in carrots; blend well.

7Spoon mixture into prepared pans.

8Bake for 1 hour.

9Cool slightly; turn onto racks to cool completely.

10May be frozen.
