Ingredients

  • 2 tsp baking powder
  • 300 grams all purpose(plain) flour
  • 1 tbsp ground cinnamon
  • 100 grams walnuts, chopped
  • 100 grams desiccated coconut
  • 300 grams grated carrots
  • 300 ml light vegetable oil
  • 1 tbsp vanilla extract
  • 125 grams wholemeal flour
  • 300 grams superfine (caster) sugar
  • 4 large eggs, lightly beaten

Directions

    Preheat the oven to 180C.

    Grease and line 900 grams loaf pan.

    Sift the all purpose flour, wholemeal flour, baking powder and ground cinnamon into a bowl.

    Stir in the nuts, coconut and carrots

    Pour the oil, vanilla and sugar into a bowl and whisk together, then whisk in the eggs.

    Add the dry ingredients to the wet ingredients.

    Combine everything together.

    Pour the mixture into the pan.

    Bake for 45 minutes or until lightly browned.

    Insert a toothpick into the center of the bread.

    If it comes out clean, the bread is ready.
