- 2 c. sifted flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. vanilla
- 2 c. finely grated carrots
- 1/2 c. raisins
- 1/2 c. coconut
- 1/2 c. chopped walnuts
- 1 1/2 c. sugar
- 1/2 tsp. cinnamon
- 3 eggs, beaten
- 3/4 c. oil
Directions

1Sift dry ingredients in large bowl.

2Add eggs and oil and beat well.

3Stir in carrots, raisins, coconut and walnuts.

4Bake in greased and floured 9 1/4 x 5 1/4-inch loaf pan, or 2 small loaves. Bake at 350° for 70 minutes.
