  • 2 c. sifted flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 2 c. finely grated carrots
  • 1/2 c. raisins
  • 1/2 c. coconut
  • 1/2 c. chopped walnuts
  • 1 1/2 c. sugar
  • 1/2 tsp. cinnamon
  • 3 eggs, beaten
  • 3/4 c. oil

Directions

    Sift dry ingredients in large bowl.

    Add eggs and oil and beat well.

    Stir in carrots, raisins, coconut and walnuts.

    Bake in greased and floured 9 1/4 x 5 1/4-inch loaf pan, or 2 small loaves. Bake at 350° for 70 minutes.
