- 1/4 c. sugar or substitute
- 2 eggs
- 2/3 c. oil
- 1 tsp. vanilla
- 1 c. shredded carrot
- 1/2 c. chopped nuts
- 1 1/2 c. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
Directions

1Grease 3 small loaf pans; line with wax paper.

2Mix well 1 1/4 cups sugar or substitute, 2 eggs, 2/3 cup oil, 1 teaspoon vanilla, 1 cup shredded carrot and 1/2 cup chopped nuts.

3Mix and add 1 1/2 cups flour, 1 teaspoon baking soda, 1 teaspoon salt and 1 teaspoon baking powder.

4Mix until moist.

5If you double recipe, use only 1 teaspoon soda.

6Bake at 350° for 1 hour.

7Freezes well.
