- 2 c. flour
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 1/4 tsp. salt
- 2 c. sugar
- 2 tsp. vanilla
- 3 eggs
- 3/4 c. oil
- 3/4 c. milk
- 2 c. grated carrots
- 1 (9 oz.) can crushed pineapple
Directions

1In small bowl, mix dry ingredients and set aside.

2In large bowl, mix sugar, vanilla, eggs, oil and milk at medium speed for about 2 minutes.

3Gradually add dry ingredients and mix for about 2 more minutes.

4Add carrots and pineapple (with juice).

5Pour into greased baking pan and bake at 350° for 50 minutes.
