- 1 c. sugar
- 3/4 c. vegetable oil
- 2 well beaten eggs
- 1 1/2 c. self-rising flour
- 1 tsp. cinnamon
- 1 c. grated carrots
- 1 c. chopped pecans
- 1 c. raisins
Directions

1Preheat oven to 350°.

2Mix sugar, oil and eggs.

3Sift in flour and cinnamon.

4Add carrots, nuts and raisins.

5Mix well.

6Pour into floured, greased loaf pan.

7Bake 30 to 35 minutes or until done. Freezes well.

8Makes 1 loaf.
