Ingredients

  • 2 c. all-purpose flour
  • 2 tsp. ground cinnamon
  • 1 1/2 c. sugar
  • 1 tsp. vanilla
  • 1/2 c. raisins
  • 1/2 c. flaked coconut
  • 2 eggs
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. salad oil
  • 2 c. finely grated carrots
  • 1/2 c. chopped nuts

Directions

    Combine flour, baking powder, cinnamon, salt and sugar.

    Add salad oil, vanilla, carrots, raisins, coconut, eggs and vanilla. Mix in nuts until well blended.

    Pour into a greased 9 x 5 x 3-inch loaf pan.

    Bake at 350° for 1 hour and 15 minutes.
