- 2/3 c. salad oil
- 1 c. sugar
- 2 eggs
- 1 1/2 c. flour
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 tsp. salt
- 1 1/2 c. grated carrots
- 1/2 c. chopped pecans
Directions

1Cream oil and sugar.

2Add eggs, one at a time, beating well after each.

3Sift together dry ingredients and add to the creamed mixture.

4Fold in carrots and pecans.

5Pour into greased and floured 9 x 5 x 3-inch loaf pan.

6Bake at 350° for 50 to 60 minutes.
