- 4 eggs
- 2 c. sugar
- 1 1/4 c. Crisco oil
- 2 c. flour
- 2 tsp. cinnamon
- 2 tsp. baking powder
- 1 tsp. soda
- 1 tsp. salt
- 2 tsp. vanilla
- 1 (8 oz.) can crushed pineapple
- 2 c. shredded carrots
- 1 1/2 c. chopped nuts
Directions

1Beat eggs and sugar until light.

2Add oil and vanilla and beat. Sift dry ingredients together.

3Add to sugar mixture; add pineapple, nuts and carrots.

4Mix well.

5Bake at 350° for 50 to 60 minutes in a greased and floured tube pan.
