  • 4 eggs
  • 2 c. sugar
  • 1 1/4 c. Crisco oil
  • 2 c. flour
  • 2 tsp. cinnamon
  • 2 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. salt
  • 2 tsp. vanilla
  • 1 (8 oz.) can crushed pineapple
  • 2 c. shredded carrots
  • 1 1/2 c. chopped nuts

Directions

    Beat eggs and sugar until light.

    Add oil and vanilla and beat. Sift dry ingredients together.

    Add to sugar mixture; add pineapple, nuts and carrots.

    Mix well.

    Bake at 350° for 50 to 60 minutes in a greased and floured tube pan.
