- 2 c. flour
- 2 c. sugar
- 2 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 tsp. salt
- 2 tsp. baking soda
- 1 c. vegetable oil
- 4 eggs
- 3 c. finely grated carrots
- 1/2 c. chopped nuts or raisins (optional) or 8 oz. crushed pineapple
Directions

1Combine dry ingredients in mixer bowl or processor bowl.

2Add oil, eggs and carrots and mix well.

3Add nuts, raisins or pineapple, if desired.

4Pour into greased and lightly floured 13 x 9-inch pan or two 9-inch layer pans.

5Bake at 350° for 35 to 40 minutes and test.

6Cool cake and frost.
