- 2 c. flour
- 1 3/4 c. sugar
- 1 1/4 c. oil
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 4 eggs
- 1/2 c. chopped pecans
- 3 c. (1 lb.) finely grated carrots
Directions

1Grease and flour 3 (9-inch) layer cake pans.

2Preheat oven to 350°.

3Mix oil and sugar; beat in eggs, one at a time.

4Add dry ingredients.

5Fold in carrots and nuts.

6Divide evenly in 3 pans and bake for 30 minutes.

7Remove from pans and cool on racks.

8Cut each layer in half, so there are 6 layers.

9Frost layers with Carrot Cake Icing (recipe follows).
