- 4 whole eggs
- 1 1/2 c. Wesson oil
- 2 c. sugar
- 3 c. shredded carrots
- 1 tsp. vanilla
- 2 c. flour and 2 Tbsp.
- 1 or 2 tsp. cinnamon
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. chopped nuts
Directions

1In one bowl, mix eggs, oil, sugar, carrots and vanilla.

2Into another bowl, sift dry ingredients.

3Mix the two together and beat well.

4Stir in nuts.

5Bake in loaf pan at 350° fo 45 minutes or until tests done.
