  • 4 whole eggs
  • 1 1/2 c. Wesson oil
  • 2 c. sugar
  • 3 c. shredded carrots
  • 1 tsp. vanilla
  • 2 c. flour and 2 Tbsp.
  • 1 or 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 c. chopped nuts

Directions

    In one bowl, mix eggs, oil, sugar, carrots and vanilla.

    Into another bowl, sift dry ingredients.

    Mix the two together and beat well.

    Stir in nuts.

    Bake in loaf pan at 350° fo 45 minutes or until tests done.
