  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 3 eggs
  • 2 c. grated carrots
  • 1 c. crushed pineapple, drain and save juice*
  • 2 1/2 c. sifted flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1 c. chopped nuts
  • 1 box powdered sugar
  • 1 cube margarine
  • 1 (3 oz.) pkg. cream cheese
  • 1 tsp. vanilla
  • pineapple juice*

Directions

    Cream oil, sugar and eggs well.

    Add carrots and pineapple; mix well.

    Sift flour, soda, cinnamon and salt together.

    Add to creamed mixture.

    Add nuts and vanilla last and beat well.

    Bake in 3 (8-inch) cake pans at 350° for 45 minutes or in small loaf pans for 1 1/4 hours.
