- 1 1/2 c. salad oil
- 2 c. sugar
- 3 eggs
- 2 c. grated carrots
- 1 c. crushed pineapple, drain and save juice*
- 2 1/2 c. sifted flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1 c. chopped nuts
- 1 box powdered sugar
- 1 cube margarine
- 1 (3 oz.) pkg. cream cheese
- 1 tsp. vanilla
- pineapple juice*
Directions

1Cream oil, sugar and eggs well.

2Add carrots and pineapple; mix well.

3Sift flour, soda, cinnamon and salt together.

4Add to creamed mixture.

5Add nuts and vanilla last and beat well.

6Bake in 3 (8-inch) cake pans at 350° for 45 minutes or in small loaf pans for 1 1/4 hours.
