  • 2 1/2 c. plain flour
  • 1 1/2 tsp. soda
  • 2 1/2 tsp. cinnamon
  • 1 1/2 c. Wesson oil
  • 1 1/2 c. grated carrots, packed
  • 4 eggs, separated
  • 1 tsp. salt

    Mix ingredients, except beaten egg whites.

    Fold in egg whites.

    Bake in three 9-inch pans for 30 minutes at 350°.
