- 4 eggs
- 1 1/2 c. salad oil
- 2 c. grated carrots
- 1 c. crushed pineapple, drained
- 2 1/2 c. flour
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1 1/4 tsp. baking soda
- 1/2 tsp. vanilla
Directions

1In a separate bowl, mix flour, salt, cinnamon and baking soda. In a bowl, beat together sugar, eggs and oil until well blended. Add grated carrots and pineapple.

2Add flour mix and vanilla; mix. Bake at 350° in greased and floured 9 x 13-inch pan 45 minutes. Frost with Cream Cheese Icing.
