  • 1 1/2 c. vegetable oil
  • 2 c. sugar
  • 4 eggs
  • 2 c. flour
  • 1/2 tsp. baking powder
  • 2 tsp. soda
  • 1/2 tsp. salt
  • 1 c. chopped walnuts (optional)
  • 1 (14 oz.) can crushed pineapple
  • 2 c. raw grated carrots

Directions

    Mix oil and sugar.

    Add eggs and blend.

    Mix dry ingredients well, then add nuts, pineapple and carrots and blend well.

    Bake in a 13 x 9-inch pan at 325° for 1 hour.
