  • 3 c. flour
  • 2 c. sugar
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 2 tsp. salt
  • 1 1/2 c. oil
  • 2 c. grated carrots or 2 jars junior baby food carrots
  • 4 eggs
  • 1 c. chopped nuts

Directions

    Sift dry ingredients three times and make a well; add oil, eggs, carrots and nuts.

    Pour into 10-inch tube pan and bake at 350° for 1 hour.
