- 2 c. sugar
- 1 1/2 c. cooking oil
- 4 eggs
- 2 c. unsifted flour
- 2 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 4 heaping c. shredded carrots
- 1 c. chopped walnuts
Directions

1Cream together sugar and oil.

2Beat in eggs until thoroughly incorporated.

3In another bowl, whisk together flour, baking soda, salt and cinnamon.

4Add dry ingredients into sugar, oil and egg mixture, blending well.

5Stir in carrots and walnuts.

6Bake in a 15 x 10 x 2-inch greased pan at 300° for 1 hour.

7Ice when cake has cooled.
