  • 3 eggs, well beaten
  • 2 c. sugar
  • 1 1/4 tsp. oil
  • 3 c. plain flour
  • 2 c. grated carrots
  • 1 c. chopped nuts
  • 1 small can crushed pineapple, drained
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 1 tsp. vanilla

    Mix oil and sugar; add eggs one at a time. Sift flour, cinnamon, salt, soda and baking powder. Add carrots, nuts, vanilla and pineapple. Bake at 350° for 20 to 25 minutes.
