  • 2 c. sugar
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 1/2 c. oil
  • 4 eggs
  • 1/2 tsp. salt
  • 3 c. raw, grated carrots
  • nuts (optional)

Directions

    Sift flour, sugar, baking powder, baking soda and cinnamon together.

    Add oil, eggs and salt.

    Beat for 2 minutes.

    Add carrots.

    Grease and flour 2 (9-inch) cake pans.

    Pour in batter and bake at 350° for 1 hour.
