Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 2 c. grated carrots
  • 2 tsp. vanilla
  • 1 tsp. salt
  • 4 eggs (I use 3 eggs)
  • 2 c. sugar
  • 1 1/2 c. oil (Wesson)
  • 1 c. chopped pecans

Directions

    Sift all dry ingredients together.

    Blend oil, sugar and vanilla together.

    Add eggs and beat well.

    Add dry ingredients and add carrots and pecans.

    Blend well.

    Pour into greased cake pan. Bake at 350° for 30 to 60 minutes or until done.
