- 2 c. flour
- 2 c. sugar
- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 1/2 c. salad oil
- 4 eggs
- 2 c. grated carrots
- 1 c. crushed pineapple
- 1/2 c. chopped pecans
Directions

1Sift flour, baking powder, baking soda, salt and cinnamon; set aside.

2Separate egg white from egg yolk and set mixer to medium speed.

3Beat egg white, adding sugar 1/2 cup at a time until foamy, then add the egg yolk and oil until blended.

4Next, add flour mixture and mix until smooth, then add carrots, pineapple and pecans.

5Mix at low speed until well mixed.

6Bake at 350° for 35 to 40 minutes or until tester comes out clean.
