  • 3 c. flour
  • 2 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1 1/2 c. Wesson oil
  • 4 unbeaten eggs
  • 3 c. grated carrots
  • 1 c. finely chopped English walnuts

Directions

    Mix dry ingredients.

    Add oil and eggs.

    Mix thoroughly.

    Add carrots and mix again.

    Add nuts and mix again.

    Bake in a tube pan or long 5 x 16-inch pan for 1 hour and 30 minutes at 350°. Delicious topped with ice cream.
