  • 2 c. flour
  • 2 tsp. baking powder
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 1 1/2 c. Wesson oil
  • 4 eggs
  • 3 c. grated carrots or 2 jars junior baby food carrots
  • 1/2 c. chopped nuts

    Beat eggs; add Wesson oil and sugar.

    Sift dry ingredients; add to eggs and oil.

    Add nuts and carrots.

    Bake at 325° in three 8 or 9-inch pans (or Bundt pan).
